If you are a single guy, or you don't have hashrate to backup your coin i dont recommend creating one. We are working on solutions for the 'hashrate' problem at least.
Anyways, if you still want to create coin there are actually a lot of guys who can help you.

I got the same error on Ubuntu 16.10. Here is a work around before it's fixed:

use ubuntu 16.04 with those dependencies:
sudo apt-get -y install build-essential python-dev gcc-4.9 g++-4.9 git cmake libboost1.58-all-dev librocksdb-dev

You need a 'dummy' GENESIS_COINBASE_TX_HEX to generate. Also, better add "bug-fixes.json" extention to fix some bytecoin bugs. Here is the edited config:

You can generate like this:
./mycoind --print-genesis-tx --genesis-block-reward-address SIMPLEWALLET_ADDRESS

./simplewallet --config-file configs/mycoin.conf

and then follow the dialog. It should work
