The true coin supply should be adjusted on coinmatketcap soon. I guess many old coins are lost.

Was also stuck on block 126043 on a windows machine. It's not an OS specific issue. I quickly rebuild the chain and that helped me.

Yes, you can.
A laptop is more than enough to run several masternodes and AMS masternode is not resource-hungry.
The guide in OP, which is very easy to follow.
