I've recently came across the idea of remote nodes in monero and i think it's a great way for someone like me(just a casual investor) to set up their wallet without having to sync the entire blockchain. Right now it is taking a lot of bandwidth off my internet plan.
Is it going to affect the privacy of my coins in any way by using remote nodes?
Very limited. There were more issues but they have mostly been addressed. The main remaining privacy concerns with remote nodes involve sending transactions which the remote node can associate with your IP address (if you don't hide behind Tor/VPN/etc.) and associate with each other if you send more than one tx per connection.

The remote node could send you fake information about the blockchain. In most cases this isn't that dangerous since the node would have to know your wallet address make it look like you received a fake payment, and it generally doesn't. It'll either send you valid chain data or it will look like it is sending you nothing, at which point you'll assume it is stuck or broken and switch to another node.
