I apologize if this has already been answered... Where do you get the almonds? Are they organic?
Each fall (harvest time) a relative of ours organizes a bulk order of almonds for our families and friends. They drive to California, rent a U-haul trailer and purchase the almonds directly from an almond grower. They pick up the almonds at the facility where the almonds are
being shelled.
These are not organic almonds, but they are raw-unpasteurized almonds, (until we gently roast them in our honey blend). Getting unpasteurized almonds is significant to preserve the enzymes and wonderful flavor of a truly raw almond. It is now mandatory in California that almonds are pasteurized, unless you buy directly from the grower. This past year the variety we bought are Carmels which have a stronger, nuttier flavor than some of the other varieties.
