Accepted practice is to use "Bitcoin" to label the software, protocol, and community, and "bitcoins" to label tokens/unit of currency.

Not sure if I've heard about this before and whether capitalization makes any difference so I just use them interchangeably.

I think "Bitcoin" refers to the software, whereas "bitcoin" refers to the currency. (Just like Welsh said above.)

The Bitcoin software, network, and concept is called "Bitcoin" with a capitalized "B". Bitcoin currency units are called "bitcoins" with a lowercase "b" -- this is often abbreviated BTC.
